Chocolate Brownies


Guilt-free brownies? Pretty darn close without the optional chocolate chips. But we like them added and feel like the small amount of chocolate in each brownie is offset by how otherwise healthy these yummy brownies are! Either way, we hope you enjoy these moist, chewy, chocolatey brownies as much as we do!

Ingredients

  • 3/4 cup white whole wheat flour
  • 1/4 cup whole oat flour
  • 1/2 cup unsweetened, non alkalized natural cocoa powder¹
  • 1 tablespoon flaxseed meal
  • 1/2 teaspoon baking powder

  • 3/4 cup Zsweet natural sweetener²
  • 1/2 cup date sugar³

  • 1 cup chopped walnuts or pecans
  • 1/3 cup Guittard extra dark chocolate chips (optional)

  • 1 cup organic unsweetened soymilk
  • 2 teaspoons real vanilla flavoring
  • 3 ounces Silken firm tofu (1/4 of the aseptic package) OR other firm tofu
  • 1/2 tablespoon organic unsulfured blackstrap molasses
  • 1/2 cup chunky or smooth natural peanut butter (salted)

Directions

  1. Preheat oven to 325℉. Lightly oil an 8x8-inch nonstick brownie pan, and evenly wipe it across the bottom and sides.

  2. Place a sifter on a dinner plate or in a medium bowl; and sift together the flour, cocoa powder, flaxseed meal, and baking powder. Set aside.

  3. Measure the Zsweet and date sugar. Set aside.

  4. Measure the chopped nuts and optional chocolate chips. Set aside.

  5. Puree the soymilk, vanilla, tofu, molasses, and peanut butter in a blender or food processor until smooth and fluffy. Use a spatula to scrape down the sides to make sure to get everything.

  6. Transfer the tofu mixture to a large mixing bowl. Use a fork to vigorously mix in the Zsweet and date sugar.

  7. Add the sifted dry ingredients, and use a spatula to fold and mix batter until smooth.

  8. Fold nuts (and optional chocolate chips) into the batter.

  9. Transfer the batter to the pan, and smooth out the top.

  10. Bake brownies for 32 minutes.

  11. Remove the pan from the oven, and let the brownies cool for at least 15 minutes before slicing and serving.

Yield: 12 brownie squares


Notes: By adding the optional Guittard chocolate chips [a scant 1/3 cup = 4 servings (60 grams)], the following calories, fat, and sugar are added to each brownie [28.35 grams = 1 ounce]:
     Calories: 280/12 = 23 calories/brownie.
     Total Fat (grams): 20/12 = 2 grams/brownie.
     Saturated Fat (grams): 12/12 = 1 gram/brownie
     Sugars (grams): 24/12 = 2 grams/brownie

Variations: Mini chocolate chips could be substituted for regular size chips, if you prefer. For a sweeter brownie, powdered Zsweet can be lightly sprinkled over the tops. Frosting could also be added; refer to frosting recipes. For a variety of flavors, refer to other brownie recipes.
